it is nice to see some trying to solve problems by your own and sharing your experience with community.
Few suggestions:
1. Ask me pm for specific stuff, or even better, at fb messenger (TheC64 mini group).
2. Many (almost the most) questions are answered (many ready made solutions!) at our Mini Wiki. Take your time, research things.
3. Please, if possible, do not call games and programs "roms". Old farts like me are allergic to this.
4. TAP loading time etc: by using VICE snapshots, you can make games instantly start at the point you like (e.g. to skip boring loading). Paolo attached briefing at his "84 collection" how to make your own games like that ones at Carousel. Again, link at Mini Wiki.
5. Disk swapping, save disks etc: there is a possible workaround, you should check it at Mini Wiki.
6. You can use .d82 instead .d81 at Mini - it means 1042KB instead 800KB - but it is different hardware, and it could lead to problems with special loaders, saving games, multi-part games etc. Use DirMaster for that.
7. Making your own EasyFlash cartridge (compilation) is not dark magic anymore. It has some advantages (more space, instant load of progs) and disadvantages (no saving, no separate .cjm files) over e.g. disk images. But it could be combined to snapshots etc.
Disclaimer: I am PAL / EU guy, I can't provide you specific NTSC support (although I do have some experience and knowledge).
