I go to power off the c64 Maxi and it resets and I have to input the settings all over again as though it's been factory reset. Am I doing something wrong?

Try a power supply with more amp rated ability. Some of these minis and maxis didn't have the right USB power supply, or it's not really the rating it says it is. Also try switching USB cables. Sometimes that can make a difference.
And I think to power on you tap the button once, while to power off you hold it a few seconds, and if you only tap it the unit resets? Not sure about that been a while since I used the Maxi. Had to sell it but will be getting another one.

Wanted to add pretty sure I watched a video reviewing new firmware updates on the mini or maxi where the power button can now be used as a soft software or hard hardware reset.
If I heard right this was done to provide compatibility with original hardware that had one or both features using a key combo in order to make the mini or maxi compatible with things like cartridges such as the snap shot or things like a button on some cartridges which would boot you into and out of special features the cartridge offered.
I'd try pressing the power button both ways, only momentarily or holding it down and see if it powers down properly. I'd also try doing a factory reset and redownload and reinstall the latest firmware to make sure there is no issue there.
When I was watching these firmware update overview videos I was drifting off to sleep though, so I may be totally wrong about what I thought I heard. These soft or hard resets might not involve the power button but instead only use key combos.
